At King’s Fine Food, we believe that exceptional ingredients are defined by more than their flavour. They are shaped by provenance, craftsmanship, time and the people who dedicate themselves to producing them.
Acetaia Bonini embodies all of these qualities.
Born just outside Modena, in the heart of Italy’s traditional balsamic vinegar country, Bonini has developed a reputation for producing exceptional balsamic vinegar and condiments with an uncompromising focus on quality.
What began as a passion project for Fabio Massimo Bonini and a small group of friends grew into an internationally recognised producer, whose products have found their way into some of the world’s most distinguished kitchens.
For King’s Fine Food, Bonini represents everything we look for in a producer: a genuine connection to its land, respect for tradition, painstaking craftsmanship and a product that allows exceptional ingredients to speak for themselves.

A Passion Born in Modena
The story of Acetaia Bonini began almost by chance.
Fabio Massimo Bonini, born just a short distance from Modena, developed a passion for balsamic vinegar through years of tasting and exploration. Together with a close group of friends, he set out to create a product with one simple ambition: excellence.
Without an established family production to draw upon, the group took a different approach. They researched and tasted balsamic vinegar from barrels throughout the surrounding area, learning from the traditions of Modena and gradually developing their own style.
The result was Bonini Black – a high-quality culinary project that would become the foundation of Acetaia Bonini.
The company’s first customers included renowned chefs such as Heinz Beck, Sergio Mei and Ettore Bocchia. Their support helped reinforce Bonini’s determination to maintain its standards as the company developed.
Today, Bonini continues to combine this artisanal approach with an international outlook, sharing the distinctive character of Modena’s balsamic tradition with customers and chefs around the world.
The Essence of Modena in Every Drop
To understand Bonini, it is essential to understand the ingredient at its heart.
Traditional Balsamic Vinegar of Modena PDO is made exclusively from cooked grape must. Unlike many commercial balsamic vinegars, it does not rely on a blend of wine vinegar and concentrated must.
At Bonini, the grape is the starting point – and nothing is added to alter its essential character. The company’s own philosophy is beautifully simple: its balsamic products are made using cooked grape must, with the company’s 2024 label redesign even taking inspiration from the Trebbiano and Lambrusco grapes of the region.
It is a product in which the land of Modena, its grapes and its traditional production methods all come together.
But the real magic happens with time.
The Art of Slow Ageing
Traditional balsamic vinegar is not something that can be rushed.
After the grape must has been cooked, it begins a long process of natural transformation and ageing. Bonini’s traditional balsamic develops inside a series of wooden barrels known as a batteria.
Each barrel can be made from a different type of wood, including oak, cherry, chestnut, ash and acacia. As the vinegar gradually moves through the barrels, each wood contributes its own characteristics to the developing flavour and aroma.
The changing seasons of Modena also play an important role.
Warm summers encourage evaporation and concentration, while colder winters allow the vinegar to rest and mature. Over many years, natural fermentation and oxidation gradually transform the cooked grape must into a complex balsamic vinegar with increasing depth, concentration and balance.
Traditional Balsamic Vinegar of Modena PDO must be aged for at least 12 years, while the Extravecchio classification requires at least 25 years of ageing.
Bonini takes this philosophy even further with its collection of aged condiments, including Stravecchio aged for 25 years and Riserva aged for 50 years.
These are products where time is not simply a number on the label. It is an essential ingredient.
What Makes Bonini Different?
It is easy to assume that all balsamic vinegar is essentially the same.
It isn’t.
Traditional Balsamic Vinegar of Modena PDO is a very specific product, governed by strict production requirements and a long maturation process. Bonini itself highlights the important distinction between Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI.
Traditional Balsamic Vinegar is made exclusively from cooked grape must and aged for a minimum of 12 years. Other balsamic products may contain wine vinegar and concentrated grape must and can have significantly shorter ageing periods.
The difference can be experienced in the glass – or, more importantly, on the plate.
Aged traditional balsamic develops a remarkable balance between sweetness and acidity, together with layers of aroma, depth and complexity.
It is not simply a vinegar to be poured generously over a dish.
It is a finishing ingredient where a few carefully placed drops can transform a plate
Why King’s Fine Food Chose Bonini
At King’s Fine Food, we carefully select producers who share our belief that quality begins with the ingredient itself.
Our relationship with Bonini is built around a shared appreciation for provenance, craftsmanship and authenticity.
Just as we look for exceptional caviar, olive oil, chocolate, rice and other specialist ingredients from producers who understand their craft, we look for the same qualities in balsamic vinegar.
Bonini offers something particularly special: a direct connection to the traditions of Modena combined with an ambitious approach to quality.
The company’s products are 100% Italian and handcrafted, while its relationship with some of the world’s leading chefs demonstrates the versatility and culinary credibility of what it produces.
For us, this is the essence of a great King’s Fine Food supplier.
It isn’t about following a trend. It is about finding a producer with a genuine story, a distinctive product and the expertise to deliver exceptional quality time and time again.
Bonini has all three.
From the Acetaia to the Kitchen
One of the great pleasures of Traditional Balsamic Vinegar is its versatility.
Its combination of sweetness, acidity and aromatic complexity means that it can be used across both savoury and sweet dishes.
Bonini recommends pairing traditional balsamic with everything from Parmigiano Reggiano and aged cheeses to grilled meats, fish and vegetables, while its sweetness and depth also make it a beautiful partner for strawberries, peaches, pears, vanilla ice cream and panna cotta.
For chefs, its ability to provide a concentrated burst of flavour makes it particularly useful as a finishing touch.
And this is where Bonini’s range becomes especially interesting.
A younger balsamic can bring brightness and acidity, while more mature condiments such as Stravecchio offer greater concentration, viscosity and depth.
The age of the balsamic can therefore become part of the creative process – allowing chefs to select the right expression for the dish.
A Favourite Among Chefs
Bonini’s reputation has been built not only through its production methods but through the chefs who have chosen to work with its products.
The company has developed relationships with a number of internationally recognised chefs, including Heinz Beck, Enrico Bartolini and Ettore Bocchia, who have used Bonini balsamic in their own dishes and recipes.
The Bonini website also features recipes created by chefs, demonstrating how its different aged condiments can be incorporated into sophisticated dishes.
From Parmigiano-filled cappelletti finished with Stravecchio to seafood, meat and dessert applications, these recipes show that balsamic can be far more than a dressing.
It is an ingredient capable of becoming part of the dish’s identity.

More Than a Condiment
There is something particularly special about an ingredient that has been created with patience.
A bottle of aged Bonini balsamic represents years of natural transformation – from the original grape must, through the changing seasons and gradual concentration inside wooden barrels, to the moment when a few drops finally reach the plate.
It is why Traditional Balsamic Vinegar of Modena should be treated differently from everyday vinegar.
Bonini recommends enjoying traditional balsamic raw rather than cooking it, as heat can alter its complex aromatic characteristics. A few drops are often all that is needed.
That restraint is part of its luxury.
You don’t need a lot.
You simply need the right one.
