High-end food has an equally complex logistics chain. Laura and Holly King are the owners of King’s Fine Food, which supplies caviar to places such as the Ritz, the Dorchester and Fortnum & Mason. Most caviar at King’s comes from suppliers that are largely based in France, Italy, Germany and China — now one of the biggest caviar hubs in the world. King says importing caviar from the EU can cost up to £500 in tax alone. The delicacy typically arrives by air in refrigerated containers and is packed and fitted with temperature probes that are monitored en route. This is particularly important when the caviar is coming from as far away as China. Once it arrives at King’s, it is batched into smaller servings for sale.
